Best Super Easy Banana Bread Recipe

 

If there was one skill that I had to identify,
something that I have completely mastered
(besides real estate of course 🙂 )

that I am absolutely 100% confident in,
it would have to be the careful nurturing
of the exquisitely slightly mushy dark brown banana.

Mimi and JenMy friends from far and wide are always  astonished at my skill when admiring our family’s fruit bowl.   I would not feel right going any further, however, if I didn’t acknowledge my Mom with a big “shout out” and “thank you” for consistently demonstrating her specialized technique throughout my childhood of buying more bananas than we could eat then patiently ignoring the few remaining fruits until they were almost unrecognizable.    So, “Thank You Mom!!”  because now I too am an expert which means I am almost always prepared to make this delicious and super easy one-bowl banana bread recipe…  hope you enjoy!

Super Easy Banana Bread

1 1/4 cups flour

3/4 cup sugar (can be reduced to 1/2 cup)

3/4 tsp. baking powder

3/4 tsp. baking soda

1/2 tsp. salt

1/3 cup chopped walnuts (optional)

1/2 cup mashed ripe bananas
(I like mine really brown :), 1-2 bananas)

1/2 cup buttermilk
(can be made with 2 tsp vinegar and 1/2 cup milk)

1/3 cup vegetable oil
(can replace all or half with applesauce)

1 egg

1/2 cup chocolate chips
(I guess those are optional but who wouldn’t add chocolate chips??)

Banana Bread BundtPreheat over to 350 degrees. Add dry ingredients to a bowl and give a quick mix to combine. Then add banana, buttermilk, oil, and egg and mix thoroughly. Add in chocolate chips and/or walnuts if desired. Pour into greased and floured bread pan. Bake for approximately 45 minutes. I typically double the recipe and bake in a bundt pan for approximately an hour (until springs back to touch and tooth pick comes out clean).

Let cool and enjoy!!!

covid-19 essential servicesThese are incredibly difficult and increasingly dynamic times as our towns, states, country, and world struggle to battle the covid-19 pandemic.    Please rely on sources like your personal physicians, the  CDC (Center for Disease Control) and the WHO (World Health Organization) for accurate information the virus, how best to protect yourself, and the best course of action if you feel  you may have been in contact with an individual who has tested positive and/or you are experiencing symptoms that are concerning you.

For those of us in Massachusetts, Governor Baker has just announced a “stay-at-home” advisory for all non-essential services.  They have also outlined who they consider to provide “essential services”.  Please click this link for the comprehensive list outlined by the Governor’s office for Massachusetts.

Reflecting on 2019

It’s here… can you believe it is 2020?  Seriously, 1990 is now just as far in the past as 2050 is in the future.  Crazy.   And I can’t believe I have been away from BeHomeBeWell for so long.  I am thrilled to be able to dedicate some time to share here once again.

Reflecting on 2019 I am proud to say that as a Mom I made it through the college application process, FAFSA application process,  final dance recitals, senior prom, high school graduation, and then dropping my daughter off for her freshman year of college – all during one of the busiest and most successful years in real estate I have had.

A huge thank you to all of my amazing buyers and sellers.  I couldn’t have done it without you.

As my clients, you all had very different stories.  Different challenges.  Different motivations.   But, together we go it done, no matter the obstacle.  It was your willingness to collaborate and work towards a solution that lead to so many homes being sold, so many homes being bought, and so many homes being built.  What an honor to have had the opportunity to work with each one of you!

And congratulations on so many of your blessings over the past year!  Engagements, weddings,  babies, new homes, retirements, cancer remission, new jobs, new puppies, exciting home renovations, and even a much needed transplant for a very deserving gentleman.   Just amazing and know I have celebrated all of that with you.

Along with the celebrations there have also been struggles and sadness.  Many lost loved ones, dealt with incredible mental health and medical diagnoses,  had jobs eliminated,  suffered injuries, and faced sudden and unexpected financial difficulties.   Life has a way of challenging us that is for sure.    There were many moments I would cry quietly in my car thinking of all you were enduring … no doubt about it, life is hard.

Sharing your personal journeys and your real estate journeys has allowed me to continue to grow,  learn, and appreciate all of my amazing blessings. Thank you again for allowing me to earn your trust and be a part of making your last real estate move whether buying or selling.   I also wanted to let you know, that once again, as each of your deals closed this year, you made a difference in the lives of children living with serious illnesses and their families.  Jen, Avery, and Zoe Hole In the WallMy family tucked away $100 per closing to donate to an organization very near and dear to our hearts – The Hole in the Wall Gang Camp.  They made all of the difference for us when our daughter  Zoe was diagnosed with brain cancer and they still continue to make a difference today for Avery, Pat, and me as we learn to live as a family of three now.  This year we donated $4000.  We could not be happier about making such a big contribution to such a worthy cause.

Heading into 2020, I wish you much happiness and health in the year to come…

Recently, KCM (Keeping Current Matters) reported that many believe a recession could happen within the next two years. We explained that 70% of economists and market analysts surveyed last year believe that a recession will occur in 2019 or 2020 and that 42% of consumers currently looking to purchase a home also agree that a recession will occur this year or next.

However, the U.S. economy has performed well in the first quarter of 2019 and that has caused some experts to change their thinking on an impending economic slowdown.

Here are a few notable examples:

Anthony Chan, Chief Economist at JPMorgan Chase

“I feel really comfortable that the economy is slowing down this year, but not going into a recession… It doesn’t look, to me, like the odds of a recession in 2020 are there.”

Dean Baker, Senior Economist at the Center for Economic & Policy Research

 “To sum up the general picture, the U.S. economy is definitely weakening… However, with wages growing at a respectable pace, and job growth remaining healthy, we should see enough consumption demand to keep the economy moving forward. That means slower growth, but no recession.”

Lisa Shalett, Chief Investment Officer, Wealth Management at Morgan Stanley

“I’m not convinced a recession is coming soon… I see an improving housing market (low rates help), a rebound in bank lending, a tight labor market, higher oil prices and well-behaved credit markets. All these point to a stable U.S. economic outlook.”

Bottom Line

We are seeing a stronger economy than many had predicted. That has caused some experts to push off the possibility of a recession further into the horizon.

4 Ingredient Gluten Free Peanut Butter Chocolate Bars – yahoo!

Who’s looking for super easy, super quick, super good gluten free snack to satisfy your strongest sugar/salt craving?   I was at a luncheon the other day and these bite sized nuggets of goodness were served.   They certainly aren’t Reese’s peanutbutter cups 🙂  but I bet you could keep adapting the recipe to get them closer 🙂

Anyway, I seriously made a batch using one bowl, a whisk, a scraper, a pan, and a microwave.  Dreamy!  So here you go…

peanut butter bars

Four Ingredients:
Creamy peanut butter
You can definitely go with natural and unsalted peanut butters – but I haven’t gotten to that point of healthy treats yet 🙂
Honey or pure maple syrup
Gluten free rolled oats
Chocolate chips 

Directions for the bars:
1 cup creamy peanut butter
1/4 cup plus 2 tablespoons honey or syrup
1 1/4 gluten free oats

  1.  Line an 8 inch spare pan with parchment paper or wax paper.
  2.  In microwave safe bowl, add peanut butter and maple syrup/honey.  Blend together with a whisk.  Microwave in 30 second intervals and whisk in between until warm, smooth, and a little bubbly.
  3. Add the oats.  Combine until peanut butter mixture and oats are throughly blended.
  4. Pour oat mixture into the parchment lined pan and press until evenly dispersed.

Directions for the chocolate layer on top:
1/2 cup chocolate chips
1/4 cup plus 1 tablespoon creamy peanut butter

  1.  Wipe out that microwavable bowl and add remaining peanut butter and chocolate chips.  Stir together and again in 30 second increments, heat in microwave until mixture can be blended completely and is smooth.
  2. Pour over the oat mixture already in the pain and spread evenly.
  3. Place in freezer for 30 minutes or until firm on top.  Remove and slice into small bars – you may need to wait for them to thaw a bit to get a good cut.
**I HIGHLY recommend waiting for bars to come back to room temperature before eating.  They can be tough to chew when still frozen 🙂 These can be stored in the refrigerator or in covered containter but again, I think most enjoyable when not cold.
